Delicious Beef in Oyster Sauce Recipe

Preparation time: 15 minutes
Total cooking time: 5 minutes
Serves 4

Ingredients for beef in oyster sauce:

1/2 teaspoons cornflour
1/2 cup (125ml/4 fl oz.) beef stock
2 tablespoons oyster sauce
1 teaspoon finely crushed garlic
1 teaspoon caster sugar
oil, for cooking
350g (12 oz.) rump steak, finely sliced
250 g (8 oz.) beans, topped and tailed,
cut into 5cm (2 inch) lengths
1 small red capsicum, sliced
1/2 cup (60 g/2 oz.) bean sprouts

Directions for beef in oyster sauce:

1. When you will want to cook this recipe, first dissolve the cornflour in a little of the stock. First mix with the remaining stock, the garlic, the oyster sauce and the sugar and set aside.
2. Then heat the wok until it becomes hot, after add 1 tablespoon of the oil and swirl it around to coat the side. Then add the beef in batches and stir-fry over high heat for about 2 minutes or so
3. Then add the beans and the capsicum and stir-fry another minute or so.
4. After that, add the cornflour mixture to the wok and cook until the sauce boils and thickens. Stir in the bean sprouts. It should be served immediately.

Hints:

1. Brown the steak in batches so the wok doesn't overcrowd and reduce the temperature.
2. Add the beans and capsicum to the browned meat and stir-fry for 1 minute.
3. Add the mixture of stock and cornflour and stir until the sauce boils and thickens.
